Stuffing Balls

Makes about 40 balls.

1 box seasoned stuffing mix, prepared as directed (Stove Top etc.)
1 box frozen chopped spinach, thawed and completely drained of all liquid
1 egg, beaten
2 tbps grated parmesan cheese
Dijon mustard

1. Preheat oven to 350 degrees.
2. Combine prepared stuffing with spinach, egg and cheese in a large bowl
3. Form 1 inch balls out of mixture.
4. Place on ungreased baking sheet and bake for 20-30 minutes or until golden brown
5. Serve on toothpicks with mustard for dipping.
