1 large zucchini
1/2 tsp olive oil
* This is for a serving of one. Add more zucchini for more people
1. Cut off ends of zucchini. Using a vegetable peeler, peel zucchini into thin strips.
2. In a medium saucepan, heat up olive oil.
3. Place zucchini strips into pan and heat until zucchini turns translucent.
4. Remove from heat.
5. Top with tomato sauce.
* For a source of protein I added a chopped up chicken cutlet.
