I love quinoa and mixing vegetables to it! This was a great side dish to eat with tonight’s salmon.
1 cup quinoa
2 cups water
1 large sweet potato, peeled and cut into 1/4-inch cubes
2 cups broccoli florets
1/2 cup sliced almonds
1 tablespoon soy sauce, or to taste (optional)
1. Bring the quinoa and water to a boil in a saucepan. Reduce heat to low, cover, and simmer until the quinoa is tender and the water has been absorbed, about 15 to 20 minutes.
2. Meanwhile, place the diced sweet potatoes into a saucepan with a little water. Cover, and bring to a simmer over medium-high heat. Steam until the sweet potatoes are just slightly tender.
3. In small pot, combine water and broccoli and cook until tender.
4. In a large bowl, combine all ingredients. Season to taste with soy sauce.
