2 tablespoons olive oil, divided
1 small onion, chopped
2 cloves garlic, minced
3 cups baby spinach
1 medium potato, grated
1 teaspoon dried oregano
1/4 cup diced red bell pepper
1/4 cup diced yellow bell pepper
1/4 cup whole wheat flour
Sea salt and freshly ground pepper, to taste
1. Heat half the olive oil in a heavy skillet over medium heat. Add the onion and cook until soft. Add the garlic, and cook for one additional minute. Add the spinach and stir until wilted. Turn off heat and transfer to a large bowl.
2. Add the potato, oregano and peppers to the medium mixing bowl and stir. Add the eggs and flour, and season with salt and pepper.
3. Form the mixture into patties.
4. Heat the remaining olive oil in a skillet and cook the cakes until crispy and browned on both sides.
