Kale Chicken Rollups


  • 2 boneless skinless chicken breast halves (6 ounces each)
  • 1/2 cup fresh baby kale, chopped and ribs removed
  • 1/4 cup shredded monterey jack cheese
  • 2 tablespoons butter, divided
  • 1/4 cup seasoned bread crumbs


  1. Flatten chicken to 1/4-in. thickness; layer with kale and cheese. Roll up and secure with toothpicks.
  2. In a shallow microwave-safe bowl, melt 1 tablespoon butter. Place bread crumbs in another bowl. Dip chicken in butter, then roll in crumbs. 
  3. Place seam side down in an 8-in. square baking dish coated with cooking spray. Bake, uncovered, at 375° for 30 minutes or until chicken juices run clear. 
  4. After 30 minutes, remove from oven and top chicken with additional kale and cheese and place back in oven until cheese melts, about 5-7 additional minutes.
  5. Remove from oven and serve ((don’t forget to remove the toothpicks!)
