Chocolate Banana Pudding Bread

Ingredients

For Banana Dough

  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/4 cup sugar
  • 1 package banana cream pudding mix (just the dry pudding mix)
  • 1 mushy banana
  • 1 egg, slightly beaten
  • 3 TBSP butter, melted
  • 1/2 tsp vanilla
  • 1/2 cup applesauce

For Chocolate Dough

  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/4 cup sugar
  • 1 package chocolate pudding mix (just the dry pudding mix)
  • 2 eggs, slightly beaten
  • 6 TBSPs butter, melted
  • 1/2 tsp vanilla
  • 1/2 cup applesauce

Directions

  1. Preheat your oven to 350 degrees.  Spray a bread pan lightly with cooking spray and set aside.
  2. In a large bowl combine the flour, baking soda, sugar, and banana pudding mix.  Whisk together and set aside.
  3. In a smaller bowl mush up the old banana, then add the egg, butter, vanilla and apple sauce.  Fold the banana mixture into the dry ingredients for the banana bread dough.
  4. In a third bowl (large please) combine the flour, baking soda, sugar, and chocolate pudding mix.
  5. In a fourth bowl (smaller please) combine the two eggs, six tablespoons melted butter, vanilla, and apple sauce.  Then fold this mixture into the dry ingredients for the chocolate bread dough.
  6. You now have two large bowls filled with enough to make half a loaf of bread, one chocolate, and one banana.  Working one spoonful at a time, add banana dough, then chocolate dough to the bread pan.  Alternate in the pan until you have added all the dough.  If you’d like it to have a slightly more marbled look (as I did), run a butter knife through the dough.
  7. Bake for 50 minutes.  This will leave the middle of the bread slightly gooey, which I think is delicious.  If you’d like it a little thicker, bake a little longer, waiting until a toothpick stuck in the middle comes out with just a few crumbs.
  8. Cool in the pan for 10 to 15 minutes, then remove from pan and let cool completely on a wire rack before you slice into it.

Note:  The dough (both the chocolate and the banana) will be very thick.  Don’t worry, all will be moist and delicious when it comes out of the oven.
