Blueberry Bread


1/2 cup butter, room temperature
3/4 cup sugar
1 egg
2 teaspoons vanilla
2 cups flour
2 teaspoons baking powder
1 teaspoon kosher salt
1/2 cup buttermilk
2 cups fresh or frozen blueberries


1. Preheat the oven to 350F degrees. Grease a 9×5 loaf pan; set aside.
2. In the bowl of a stand mixer, cream together the butter and sugar until light and fluffy. 3. Beat in the egg and vanilla until well combined.
4. Combine the flour, baking powder, and salt in a small bowl; Add the flour mixture a little at a time to the butter mixture, alternating with the buttermilk.
5. Fold in the blueberries.
6. Bake for 50-60 minutes or until a butter knife inserted in the center comes out mostly clean.
